New Zealand Style Potato Ham Pie.

Great game but not a foregone conclusion, New Zealand have beaten France 8 to 7 in the 2011 Rugby World Cup. It’s Sunday afternoon and I’ve just returned from my favourite pub where a great miscellaneous bunch of rugby passionates roared their encouragement, and of course,  their advice for their favourite team. It was interesting to note that the majority of those present, whose team did not make it to the final were supporting the All Blacks. Understandable that the British ex-pats will never root for France but interesting that those Germans present had been shouting for New Zealand.

Anyways, I don’t think it was political. It was more to do with their love of spectacular and the traditional Maori war dance, the Haka - traditionally performed before the game - by the All Blacks appealed as much as the game.

Being confident that my favourite team would win, I’d pre-prepared a late easy but satisfying lunch.

Here's the New Zealand Style Potato Ham Pie. Recipe from my friend Kymmarie and the wine, a 2008, Northburn Station Central Otago Riesling 2008, stolen especially for me by Mordechai, an accomplice from Christchurch. Well done the All Blacks. Kia kaha.

New Zealand Style Potato Ham Pie.

1 1/2 lbs potatoes
2 teaspoons salt
1/4 teaspoon white pepper
1/8 teaspoon nutmeg
6 tablespoons butter
1/4 cup dry breadcrumbs
1/4 lb swiss cheese, cut julienne
1 lb ham, cooked and cut julienne
1. Cook potatoes until tender and mash until smooth. Beat in salt, pepper, nutmeg and 2 Tbl butter.
2. Spread 2 rbsp butter in a 9-inch pie plate. Dust with half of bread crumbs, then cover with 1/2 of the potatoes. Arrange cheese and ham over it and cover with the remaining potatoes. Sprinkle with remaining bread crumbs and dot with remaining butter.
3. Bake at 400°F for 25 minutes or until it browns. Cut into wedges.
